  1. Prepare the Beef: Begin by cutting the beef into uniform cubes and trimming away any excess fat. Rinse the pieces thoroughly and set aside.

  2. Prepare the Spice Paste: Peel the garlic and shallots. Slice the galangal and ginger into thin pieces. Place these ingredients, along with the lemongrass and kaffir lime leaves, into a blender. Blend until the mixture forms a smooth paste.

This process can take some time, so be patient and stir frequently to prevent burning. The rendang is done when the sauce has reduced to a rich, thick consistency and the beef is tender.
