Indonesian Beef Rendang Recipe
Ingredients:
- 250 grams thinly sliced beef
- 1 packet instant coconut milk (such as Sunkara)
- 1 stalk lemongrass
- 2 bay leaves
- 2 kaffir lime leaves
- A small piece of cinnamon stick
- A few cloves
- A pinch of cumin seeds
- Spice Paste:
- 3 cloves garlic
- 6 shallots
- 2 cm turmeric root
- 2 cm ginger
- 2 cm galangal
- 2 roasted candlenuts
- 2 whole nutmegs
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon black pepper
- 10 red chili peppers (adjust to taste)
- Salt, sugar, and seasoning to taste
Instructions:

Prepare the Spice Paste:
- Blend garlic, shallots, turmeric, ginger, galangal, candlenuts, nutmegs, coriander seeds, black pepper, and red chili peppers into a smooth paste.

Cook the Spice Paste:
- Heat a pan over medium heat and add the spice paste. Sauté until fragrant.

Add Aromatics:
- Add the lemongrass, bay leaves, and kaffir lime leaves to the pan. Continue to sauté until the leaves are wilted.

Simmer the Beef:
- Pour in a small amount of water and bring to a simmer. Add the thinly sliced beef and cook until the water begins to boil.

Incorporate Coconut Milk and Spices:
- Once the water starts boiling, add the instant coconut milk, cinnamon stick, cumin seeds, and cloves. Stir continuously to prevent the coconut milk from curdling. Reduce the heat to low.

- As the liquid reduces, season with salt, sugar, and your preferred seasoning. Adjust the flavors as needed.

- Continue to cook until the coconut milk is reduced and the oil starts to separate from the mixture.

- Once the rendang is thick and aromatic, remove from heat and serve hot.
