Authentic Indonesian Beef Rendang with Coconut and Spices

Indonesian Beef Rendang Recipe

Ingredients:

  • 1/4 kg beef (preferably a tender cut)
  • 1 small coconut
  • 3 bay leaves
  • 3 kaffir lime leaves

For the Spice Paste:

  • 7 shallots
  • 5 cloves of garlic
  • 5 large red chilies
  • 10 bird’s eye chilies (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper
  • 1 piece of ginger (about 1 inch)
  • 1 piece of galangal (about 1 inch)
  • 1 teaspoon ground coriander
  • Salt, to taste
  • Sugar, to taste

Instructions:

  1. Prepare the Beef:

    • Clean the beef thoroughly and cut it into pieces according to your preference.
  2. Prepare the Coconut:

    • Grate the coconut and divide it into two parts. Toast one half in a dry pan until golden brown, then grind into a fine paste. Extract the coconut milk from the other half.
  3. Make the Spice Paste:

    • Blend or grind the shallots, garlic, red chilies, bird’s eye chilies, cumin seeds, nutmeg, black pepper, ginger, galangal, and ground coriander into a smooth paste.
  4. Cook the Rendang:

    • Heat a wok or large pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate.
    • Add the bay leaves and kaffir lime leaves, and continue to cook for a few more minutes.
    • Add the beef pieces and cook until they are browned on all sides.
    • Stir in the toasted coconut paste and the coconut milk. Mix well to ensure the beef is coated with the spices and coconut mixture.
  5. Season and Simmer:

    • Add salt and sugar to taste. Stir well and bring to a simmer.
    • Reduce the heat to low and cook, stirring occasionally, until the liquid has reduced and the beef is tender. This can take several hours, depending on the cut of beef and your desired level of tenderness.
  6. Serve:

    • Once the rendang has thickened and the beef is tender, adjust the seasoning if needed. Serve hot with steamed rice.
