Ingredients

  • 1/4 kg beef (cut into bite-sized pieces)
  • 1/2 coconut, grated
  • 6 shallots
  • 4 cloves garlic
  • Red chilies (to taste)
  • 2 candlenuts
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of galangal (smashed)
  • A pinch of nutmeg
  • A pinch of cumin
  • Coriander seeds
  • Black pepper
  • Bay leaves
  • Lemongrass (smashed)
  • Lime leaves
  • Palm sugar
  • Salt
  • Beef stock

Instructions

  1. Prepare the Beef: Cut the beef into bite-sized pieces. If you don’t have pineapple for tenderizing, use a mortar and pestle to lightly pound the beef. Set aside.

  2. Prepare the Spice Paste: Blend the shallots, garlic, red chilies, candlenuts, coriander seeds, black pepper, cumin, nutmeg, and ginger into a smooth paste. Season with salt and beef stock. Set aside.

  3. Cook the Spices and Beef: In a large pot, heat some oil and sauté the spice paste until fragrant. Add the beef pieces, lemongrass, smashed galangal, bay leaves, and lime leaves. Cook until the beef is browned and partially cooked through.

  4. Add Coconut and Palm Sugar: Pour in the grated coconut and palm sugar. Stir well and adjust seasoning to taste.

  5. Simmer: Allow the mixture to simmer, stirring occasionally, until the liquid has reduced and the sauce has thickened. The beef should be tender and coated in a rich, flavorful sauce.

  6. Serve: Enjoy your rendang with steamed cassava leaves (boiled and salted), squeezed dry before serving. This dish is perfect for a special occasion or a hearty meal.
