Sop Iga Sapi (Beef Rib Soup)
Ingredients
Bahan 1 (Ingredients 1):
- 1/2 kg fresh beef ribs
- 1 stalk lemongrass
- 2 bay leaves
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of galangal
- 3 cardamom pods
- 3 star anise
- Ground white pepper, to taste
- 1 shallot, finely ground
- 1 garlic clove, finely ground
- Water, as needed
Bahan 2 (Ingredients 2):
- 3 tablespoons cooking oil
- 2 garlic cloves
- 3 shallots
- 4 green onions
- 3 stalks celery
- 1 tomato
Bahan 3 (Ingredients 3):
- 1/2 teaspoon beef bouillon powder (Royco sapi)
- Salt, to taste

Prepare the Beef Ribs:
- Clean the beef ribs thoroughly.
- In a large pot, combine all the ingredients from Bahan 1. Add enough water to cover the ribs generously.
- Cook the ribs over medium heat until they are very tender, approximately 60 minutes. Occasionally check the tenderness and add more water if necessary.

Sauté the Aromatics:
- In a separate pan, heat 3 tablespoons of cooking oil.
- Sauté the garlic and shallots from Bahan 2 until fragrant.
- Add the green onions and celery, cooking them briefly just until they start to soften.

Combine and Simmer:
- Pour the sautéed aromatics into the pot with the beef ribs and their broth. Stir well to combine.
- Add the tomato and continue to simmer for a few more minutes to blend the flavors.

Season and Serve:
- Add the beef bouillon powder (Royco sapi) and salt to taste.
- Adjust the seasoning as needed and turn off the heat once the flavor is balanced.
- Serve the soup hot, accompanied by sambal (chili paste) and warm rice.
