Soto Daging Sapi: Indonesian Beef Soup

Ingredients:

  • 1/2 kg beef with bones
  • 5 cloves garlic
  • 3 candlenuts
  • 2-inch piece turmeric
  • 2-inch piece ginger
  • 2-inch piece galangal
  • 2 stalks lemongrass
  • 2 bay leaves
  • Salt, to taste
  • Cooking oil, as needed
  • Water, as needed
  • Sliced scallions
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Beef: Begin by cooking the beef along with the bones in a large pot. Once the beef is tender, remove it from the pot, let it cool slightly, and then cut it into bite-sized pieces.

  2. Prepare the Spice Paste: In a blender or food processor, combine the garlic, candlenuts, turmeric, and ginger. Blend until you achieve a smooth paste.

  3. Prepare Aromatics: Lightly crush the galangal and bruise the lemongrass stalks with the back of a knife to release their flavors.

  4. Sauté the Spice Paste: Heat a generous amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.

  5. Combine Ingredients: Transfer the sautéed spice paste into the pot containing the beef. Stir well to ensure the beef is coated with the spices.

  6. Simmer the Soup: Add the crushed galangal, bruised lemongrass, and bay leaves to the pot. Pour in enough water to cover the ingredients and season with salt to taste. Simmer over medium heat until the beef is fully cooked and the flavors are well combined.

  7. Finish and Serve: Adjust the seasoning if needed. Ladle the soup into bowls, garnish with sliced scallions and fried shallots. Serve hot and enjoy the rich, aromatic flavors of your Soto Daging Sapi!
