Authentic Indonesian Beef Soto: Savory Beef Soup with Spices and Fresh Herbs

Beef Soto Recipe

Ingredients:

  • 1/4 kg beef (cut into cubes)
  • 2 packs of bean sprouts
  • 6 stalks of green onions
  • 4 stalks of celery
  • 3 tomatoes
  • 2 cm galangal
  • 1 cm ginger
  • 2 bay leaves
  • 3 kaffir lime leaves
  • Salt, to taste
  • Seasoning, to taste
  • Sugar, to taste
  • Beef bouillon powder, to taste
  • 1 stalk lemongrass (crushed)

For the Spice Paste:

  • 10 shallots
  • 5 garlic cloves
  • 2 cm turmeric
  • 5 candlenuts
  • 2 tablespoons black pepper
  • 2 tablespoons coriander

Steps:

  1. Prepare the Beef: Rinse the beef and cut it into cubes according to your preference. Place the beef into a pot of water and cook until tender.

  2. Make the Spice Paste: Blend shallots, garlic, turmeric, candlenuts, black pepper, and coriander into a smooth paste.

  3. Sauté the Spices: In a separate pan, heat some oil and sauté the spice paste. Add galangal, lemongrass, bay leaves, and kaffir lime leaves. Cook until fragrant.

  4. Combine Ingredients: Once the beef is tender, remove it from the pot and set aside. Add the sautéed spice paste into the pot with the beef broth. Bring to a boil.

  5. Add Vegetables: After the broth has come to a boil, add green onions and tomatoes. Return the beef to the pot. Season with sugar, salt, black pepper, coriander, seasoning powder, and beef bouillon powder. Stir well.

  6. Final Touches: Allow the soup to simmer until all flavors meld together. Once ready, transfer to bowls and add bean sprouts and celery just before serving.

  7. Serve: Enjoy your Soto daging sapi hot.
