  • 2 cloves garlic
  • 4 shallots
  • 2 large red chilies (cabe besar)
  • 2 bird’s eye chilies (cabe rawit)
  • 1 tomato

Instructions

  1. Prepare the Chicken:

    • Heat oil in a pan over medium heat. Fry the chicken pieces until they are half-cooked. Remove from the pan and set aside.
  2. Make the Spice Paste:

    • In the same pan, add a little more oil if needed. Sauté the garlic, shallots, red chilies, bird’s eye chilies, and tomato until fragrant and softened.
    • Once the spices are well-cooked, transfer them to a mortar and pestle or a blender. Grind into a smooth paste.
  3. Cook the Botok Ayam:

    • In a large pot, add the spice paste, sliced galangal, bay leaf, and kaffir lime leaves.
    • Stir in jaggery, granulated sugar, salt, and seasoning according to your taste. Add enough water to create a flavorful broth.
    • Bring the mixture to a simmer and add the partially cooked chicken. Cook until the chicken is tender and the flavors meld together.

    • Taste and adjust seasoning if needed. If the flavor is too strong, add a bit more water. If it’s not sweet enough, add additional jaggery or sugar as per your preference.
