Cap Jay Ayam (Indonesian Chicken Stir-Fry with Vegetables)
Ingredients:
- 1/4 chicken, cut into pieces
- 1 head of cauliflower, cut into florets
- 1 carrot, sliced
- 5 green beans, cut into pieces
- A handful of green mustard leaves (sawi hijau), roughly chopped
- 1 onion, thinly sliced
- 2 green onions, chopped
For the Spice Paste (Bumbu Halus):
- 3 cloves of garlic
- 2 candlenuts (kemiri)
- 1/2 teaspoon white pepper
Seasonings:
- Salt, to taste
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- Cornstarch, diluted in water

- Using a mortar and pestle or a blender, grind the garlic, candlenuts, and white pepper until they form a smooth paste.

- Thinly slice the onion.
- Cut the cauliflower into florets.
- Slice the carrot.
- Cut the green beans into pieces.
- Roughly chop the green mustard leaves.

Cook the Aromatics:
- In a large wok or skillet, heat a small amount of oil over medium heat.
- Add the sliced onion and stir-fry until it becomes translucent and fragrant.

Incorporate the Spice Paste:
- Add the prepared spice paste to the wok, stirring constantly until it releases its aroma.

- Add the chicken pieces to the wok and stir-fry until they begin to turn golden brown.
