Ingredients:
- 1/2 chicken, cut into pieces
- 5 shallots
- 3 cloves garlic
- 1.5 candlenuts
- 1 tsp turmeric powder
- 1 tsp coriander powder
- Cumin, to taste
- Salt, to taste
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves, torn
- 2 bay leaves (optional, if available)
- 5 bird’s eye chilies, halved
- 400 ml coconut milk

- In a mortar and pestle or a food processor, grind the shallots, garlic, and candlenuts into a smooth paste.

- In a large pan, heat a little oil over medium heat. Sauté the spice paste until fragrant.
- Add turmeric powder, cumin, coriander powder, lemongrass, salt, kaffir lime leaves, and bay leaves (if using). Continue to sauté for a few more minutes to release the flavors.

- Pour in the coconut milk and stir well to combine with the spice paste.
- Allow the mixture to come to a gentle boil, stirring occasionally.
