  • 1/2 kg chicken (lightly fried)
  • 1 can of coconut milk (Santan Kara)
  • 1 liter water
  • For the spice paste (Bumbu Halus):
    • 3 candlenuts (Kemiri)
    • 3 cloves garlic
    • 5 shallots
    • 1 thumb-sized piece of turmeric
    • 1 small tomato
    • 1/2 teaspoon coriander
    • 1/2 teaspoon black pepper
  • 1 stalk lemongrass (Sereh), bruised
  • 1 thumb-sized piece of galangal (Laos), sliced
  • 2 bay leaves (Daun Salam)
  • Seasonings:
    • Royco seasoning powder, to taste
    • Sugar, to taste
    • Cooking oil
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Chicken:

    • Begin by bringing 1 liter of water to a boil in a large pot. Add the pre-fried chicken pieces and let them cook for a few minutes to absorb the flavors.
  2. Cook the Spice Paste:

    • While the chicken is simmering, prepare the spice paste. Blend together the candlenuts, garlic, shallots, turmeric, and tomato until smooth. Heat some cooking oil in a pan and sauté the spice paste along with the bruised lemongrass, sliced galangal, and bay leaves until fragrant.
