  • Indonesian Lime Leaves (Daun Jeruk): 2
  • Lemongrass: 1 stalk, bruised
  • Cooking Oil: 2 tablespoons, for sautéing

For the Spice Paste (Bumbu Halus):

  • Shallots: 4 large
  • Garlic: 3 cloves
  • Roasted Coriander Seeds: 1/2 teaspoon
  • Roasted Candlenuts: 1 1/2 nuts
  • Turmeric: 1/2 inch piece
  • Ginger: 1/2 inch piece

Seasoning:

  • Salt: to taste
  • Sugar: to taste

Instructions:

  1. Prepare the Spice Paste:

    • In a blender, combine the shallots, garlic, roasted coriander seeds, roasted candlenuts, turmeric, and ginger. Blend until smooth, adding a bit of water if necessary to achieve a paste-like consistency.
  2. Sauté the Spice Paste:

    • Heat the cooking oil in a large pan over medium heat. Add the blended spice paste and sauté until fragrant, about 3-5 minutes.
    • Add the bay leaves, Indonesian lime leaves, and bruised lemongrass to the pan. Continue to sauté for another minute to release their flavors.
  3. Cook the Chicken:

    • Add the chicken pieces to the pan. Stir well to coat the chicken with the spice paste. Cook for a few minutes until the chicken begins to brown.
  4. Add Tofu and Tempeh:

    • Once the chicken is slightly browned, add the cubed tofu and tempeh. Stir to combine all ingredients.
  5. Simmer with Coconut Milk:

    • Pour in the coconut milk and bring the mixture to a gentle boil. Reduce the heat to low, cover the pan, and let it simmer until the chicken is cooked through and tender, about 15-20 minutes.
  6. Adjust the Seasonings:

    • Once the dish is simmered and the flavors melded, taste and adjust seasoning with salt and sugar according to your preference.
  7. Serve:
