Rawon Ayam Kepepet

Rawon Ayam Kepepet is a traditional Indonesian dish that’s both flavorful and satisfying. This recipe features tender chicken simmered in a rich, aromatic broth with a blend of spices and herbs, creating a delightful culinary experience. Here’s a step-by-step guide to making this comforting dish.

Ingredients

  • Chicken: 1/2 kg, cut into bite-sized pieces or as desired
  • Instant Rawon Spice Mix: 1 packet (e.g., Indofood brand)
  • Shallots: 3 cloves, finely chopped
  • Garlic: 2 cloves, finely chopped
  • Lemongrass: 1 stalk, smashed
  • Galangal: 2 cm, smashed
  • Kaffir Lime Leaves: 4 pieces
  • Bay Leaves: 2 pieces
  • Bird’s Eye Chilies: 6 pieces, sliced on the diagonal (adjust quantity based on your heat preference)
  • Water: 500 ml, or as needed
  • Oil: For sautéing

Instructions

  1. Prepare the Aromatics:

    • Finely chop the shallots and garlic. Heat a little oil in a frying pan over medium heat. Add the chopped shallots and garlic to the pan, sautéing until they become fragrant and translucent.
  2. Add Herbs and Spices:

    • To the sautéed shallots and garlic, add the kaffir lime leaves, bay leaves, lemongrass, galangal, and sliced bird’s eye chilies. Stir well to combine, allowing the spices to infuse the oil.
  3. Incorporate the Spice Mix:

    • Add the instant rawon spice mix to the pan. Pour in a small amount of water to help dissolve and mix the spices. Continue to cook for a few minutes until the mixture is fragrant.
  4. Cook the Chicken:

    • Add the cleaned chicken pieces to the pan. Stir to coat the chicken thoroughly with the spice mixture. Pour in approximately 500 ml of water (or adjust to your preferred consistency). Mix well to combine all ingredients.
  5. Simmer:

    • Allow the dish to simmer gently until the chicken is cooked through and tender. Occasionally turn the chicken to ensure even cooking and flavor absorption.
  6. Finish and Serve:

    • Once the chicken is fully cooked and the flavors are well blended, turn off the heat. Serve the Rawon Ayam Kepepet hot, garnished with fresh bean sprouts, chopped green onions, and a generous portion of steamed rice.

Enjoy

Indulge in the comforting flavors of Rawon Ayam Kepepet, a dish that pairs beautifully with a steaming bowl of rice and fresh vegetable accompaniments. Perfect for a cozy meal, this recipe captures the essence of traditional Indonesian cuisine.

Happy cooking and enjoy your meal! 😊
