Authentic Rawon Daging Sapi Recipe

Ingredients

  • 1 kg beef chuck (sandung lamur) – cut into cubes
  • 3 liters water
  • 10 cloves garlic – peeled
  • 10 shallots – peeled
  • 2 pieces kencur (lesser galangal) – peeled
  • 2 pieces turmeric – peeled
  • 1 piece ginger – peeled
  • 2 stalks lemongrass – bruised
  • 3 stalks green onions – sliced
  • 10 kaffir lime leaves
  • 6 candlenuts
  • 1 packet ground coriander (to taste)
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground nutmeg
  • 5 pieces kluwek (dried black nuts) – ensure they are old to avoid bitterness
  • 1 packet fried shallots (pre-packaged)
  • Salt, sugar, and MSG (seasoning powder) to taste
  • Cooking oil

Instructions

  1. Prepare the Beef: Wash the beef thoroughly and cut it into 1-inch cubes. Set aside.

  2. Soak the Kluwek: In a separate pot, soak the kluwek briefly in water until it softens. Then, mash it until smooth and set aside.

  3. Blend the Spices: Using a blender or food processor, combine the garlic, shallots, kencur, turmeric, and ginger. Blend into a smooth paste.

  4. Sauté the Aromatics: Heat a frying pan over medium heat and add a small amount of cooking oil. Sauté the blended spice paste until fragrant. Add the bruised lemongrass, kaffir lime leaves, and sliced green onions. Stir until the mixture is well combined and aromatic.

  5. Combine Ingredients: Transfer the sautéed spice mixture to a large pot. Add the cubed beef and stir until the meat is lightly browned. Pour in the water and bring the mixture to a boil.

  6. Season the Soup: Add the mashed kluwek, candlenuts, ground coriander, black pepper, and nutmeg. Season with salt, sugar, and MSG (seasoning powder) to taste. Stir well.

  7. Simmer the Soup: Reduce the heat to low and let the soup simmer gently. Occasionally stir the soup to ensure even cooking. Cook until the beef is tender and the flavors have melded together, approximately 1.5 to 2 hours.

  8. Finish and Serve: Once the beef is tender and the soup has thickened to your liking, taste and adjust the seasoning if necessary. Serve the rawon hot with steamed rice and garnish with fried shallots and any other desired accompaniments.
