Ingredients

For the Spice Paste:

  • 6 shallots
  • 8 garlic cloves
  • 1 cm ginger
  • 2 cm galangal, crushed
  • 1/2 teaspoon coriander seeds
  • 30 cumin seeds
  • 1 cm turmeric
  • 1 medium lemongrass stalk
  • 1/2 teaspoon black peppercorns

For the Soup:

  • 500 grams beef
  • 1 tablespoon granulated sugar
  • Tamarind paste, to taste
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 7 kluwak nuts, select those that are not bitter
  • 1 teaspoon beef bouillon powder
  • Chopped spring onions

Steps

  1. Prepare the Beef:

    • Pressure cook the beef for approximately 10 minutes until tender. Reserve the beef broth for later use.
  2. Make the Spice Paste:

    • Blend all the spice paste ingredients until smooth.
  3. Sauté the Spice Paste:

    • In a large pot, heat a bit of oil over medium heat. Sauté the spice paste until fragrant, then add the crushed lemongrass, kaffir lime leaves, bay leaves, and galangal.
  4. Cook the Kluwak:

    • Once the spices are well-cooked and fragrant, add the kluwak nuts and sauté briefly.
  5. Combine and Simmer:

    • Add the beef bouillon powder, granulated sugar, and tamarind paste to the spice mixture. Mix well.
    • Pour in the reserved beef broth and the cooked beef. Let the soup simmer until the flavors meld together and the beef is infused with the aromatic spices.
  6. Final Touches:

    • Just before serving, add the chopped spring onions and a generous sprinkle of fried shallots.
  7. Serve:

    • Serve the Rawon Sapi with warm rice, bean sprouts, raw tomato sambal, fried tempeh, and salted eggs. Sprinkle additional fried shallots on top for extra flavor. Enjoy!
