Rawon Sapi (Indonesian Black Beef Soup)
Ingredients:
- 250 grams of sandung lamur (beef brisket)
- 250 grams of beef ribs
- 2 cloves of garlic, crushed (optional)
- Bean sprouts (short variety), blanched with hot water
- 1 stalk of lemongrass, crushed
- 1 piece of galangal, crushed
- 1 piece of ginger, crushed
- 2 bay leaves
- 3 kaffir lime leaves
- Fried shallots, for garnish
- Salt and sugar, to taste
- 1 liter of water (as needed)
- Oil, for sautéing
For the Spice Paste:
- 4 keluak nuts (inner part soaked in hot water)
- 6 cloves of shallots
- 5 cloves of garlic
- 3 cm of turmeric
- 4 candlenuts, roasted or fried
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground cumin
- 5 red bird’s eye chilies
Instructions:

Prepare the Beef:
- Rinse the beef brisket and beef ribs thoroughly. Pour boiling water over them to blanch.
- Place the beef brisket, beef ribs, and 2 crushed cloves of garlic into a pressure cooker. Add enough water to cover the meat.
- Cook under pressure for 20 minutes from the moment the cooker starts to whistle.

Make the Spice Paste:
- In a blender or mortar and pestle, blend all the ingredients for the spice paste until smooth.

Sauté the Aromatics:
- Heat some oil in a large pot over medium heat. Add the spice paste, kaffir lime leaves, lemongrass, bay leaves, ginger, and galangal.
- Sauté until the mixture is fragrant and the oil separates from the paste, indicating the spices are well-cooked.

Combine and Simmer:
- Add the broth from the pressure cooker into the pot with the sautéed spices. Season with salt and sugar to taste.
- Add the cooked beef pieces. Let the soup simmer until the beef absorbs the flavors and becomes tender. Adjust seasoning as needed.

Finish and Serve:
- Turn off the heat and cover the pot to let the flavors meld for a few minutes.
- Serve the soup hot, garnished with fried shallots and accompanied by blanched bean sprouts.
