Rawon Sapi (Indonesian Black Beef Soup)

Ingredients:

  • 250 grams of sandung lamur (beef brisket)
  • 250 grams of beef ribs
  • 2 cloves of garlic, crushed (optional)
  • Bean sprouts (short variety), blanched with hot water
  • 1 stalk of lemongrass, crushed
  • 1 piece of galangal, crushed
  • 1 piece of ginger, crushed
  • 2 bay leaves
  • 3 kaffir lime leaves
  • Fried shallots, for garnish
  • Salt and sugar, to taste
  • 1 liter of water (as needed)
  • Oil, for sautéing

For the Spice Paste:

  • 4 keluak nuts (inner part soaked in hot water)
  • 6 cloves of shallots
  • 5 cloves of garlic
  • 3 cm of turmeric
  • 4 candlenuts, roasted or fried
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground cumin
  • 5 red bird’s eye chilies

Instructions:

  1. Prepare the Beef:

    • Rinse the beef brisket and beef ribs thoroughly. Pour boiling water over them to blanch.
    • Place the beef brisket, beef ribs, and 2 crushed cloves of garlic into a pressure cooker. Add enough water to cover the meat.
    • Cook under pressure for 20 minutes from the moment the cooker starts to whistle.
  2. Make the Spice Paste:

    • In a blender or mortar and pestle, blend all the ingredients for the spice paste until smooth.
  3. Sauté the Aromatics:

    • Heat some oil in a large pot over medium heat. Add the spice paste, kaffir lime leaves, lemongrass, bay leaves, ginger, and galangal.
    • Sauté until the mixture is fragrant and the oil separates from the paste, indicating the spices are well-cooked.
  4. Combine and Simmer:

    • Add the broth from the pressure cooker into the pot with the sautéed spices. Season with salt and sugar to taste.
    • Add the cooked beef pieces. Let the soup simmer until the beef absorbs the flavors and becomes tender. Adjust seasoning as needed.
  5. Finish and Serve:

    • Turn off the heat and cover the pot to let the flavors meld for a few minutes.
    • Serve the soup hot, garnished with fried shallots and accompanied by blanched bean sprouts.

Enjoy!
