Rendang Sapi: A Flavorful Indonesian Beef Stew

Ingredients:

  • 1 kg beef (cut into chunks as desired)
  • 1 liter thin coconut milk
  • 500 ml thick coconut milk
  • 2 bay leaves
  • 2 pandan leaves (tied in a knot)
  • 2 turmeric leaves
  • 5 kaffir lime leaves
  • For the Spice Paste:
    • 2 stalks lemongrass
    • 1 thumb-sized piece of galangal
    • 10 shallots
    • 5 garlic cloves
    • 1 thumb-sized piece of ginger
    • 2 thumb-sized pieces of turmeric
    • 15 red chilies
    • 5 candlenuts
    • 2 teaspoons coriander seeds
    • 1 tablespoon black pepper
    • Salt and sugar to taste

Instructions:

  1. Prepare the Spice Paste: Begin by making the spice paste. In a blender or food processor, combine lemongrass, galangal, shallots, garlic, ginger, turmeric, red chilies, candlenuts, coriander seeds, and black pepper. Blend until smooth, adding a little water if necessary to achieve a thick paste.

  2. Cook the Paste: Heat a generous amount of oil in a large pot over medium heat. Add the spice paste and bay leaves, pandan leaves, turmeric leaves, and kaffir lime leaves. Sauté until the mixture is fragrant and the oil starts to separate from the paste.

  3. Add the Beef: Incorporate the beef chunks into the pot. Stir well to ensure the beef is coated with the spice mixture. Cook until the meat changes color and starts to brown.

  4. Simmer with Coconut Milk: Pour in the thin coconut milk and stir to combine. Bring to a gentle simmer and cook over low heat until the liquid reduces and the beef starts to become tender. This process can take several hours, so be patient.

  5. Add Thick Coconut Milk: Once the thin coconut milk has reduced, add the thick coconut milk. Stir gently to avoid curdling. Season with salt and sugar to taste. Continue to cook, stirring occasionally, until the beef is tender and the sauce has thickened to your desired consistency.

  6. Serve: Once the beef is tender and the sauce has thickened, remove from heat. Serve hot with steamed rice and a side of cassava leaves curry for a complete meal.
