Rendang Sapi: Traditional Indonesian Beef Stew Recipe
Rendang Sapi is a cherished Indonesian dish, renowned for its rich and complex flavors. Ingredients:
- 500 grams of beef (preferably chuck or brisket), cut into bite-sized pieces
- 1 stalk of lemongrass, smashed
- 3 kaffir lime leaves
- 2 bay leaves
- 6 shallots
- 4 cloves of garlic
- 10 red chilies (mild), deseeded
- 5 bird’s eye chilies (hot), deseeded
- 1/4 nutmeg
- 2 candlenuts
- 1/2-inch piece of ginger
- 1/2-inch piece of galangal
- Ground black pepper, to taste
- Coriander, to taste
- 1-inch piece of turmeric
- Salt, to taste
- Palm sugar or brown sugar, to taste
- 1/2 mature coconut, grated (for coconut milk)
Instructions:

Prepare the Beef:
- Begin by boiling the beef in water until tender. Once cooked, drain the beef and cut it into small cubes.

Prepare the Spice Paste:
- Blend the shallots, garlic, red chilies, bird’s eye chilies, nutmeg, candlenuts, ginger, galangal, black pepper, coriander, and turmeric into a smooth paste.

Cook the Spice Paste:
- In a large pot or Dutch oven, heat a little oil over medium heat. Add the spice paste and sauté until fragrant and slightly browned.
- Add the smashed lemongrass, bay leaves, and kaffir lime leaves to the pot. Continue to cook until the spices are well combined and aromatic.

- Gradually add the grated coconut (to make coconut milk) to the pot, stirring constantly to blend with the spice mixture.
- Incorporate the beef into the mixture, ensuring it is well coated with the spice paste.
