Sate Ayam: Indonesian Chicken Satay Recipe

Ingredients:

For the Chicken Skewers:

  • 1 kg chicken (cut into cubes)
  • Bamboo skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

  • 1/4 cup roasted peanuts
  • 3 cloves garlic
  • 3 shallots
  • 5 red chilies (adjust according to your spice preference)
  • Oil (for frying)
  • Hot water (for blending)

For the Satay Marinade:

  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon margarine
  • 1 tablespoon peanut sauce
  • Salt to taste

Instructions:

  1. Prepare the Chicken:

    • Separate the chicken from the bones and cut it into bite-sized cubes. Thread the chicken pieces onto the soaked bamboo skewers, ensuring they are evenly spaced.
  2. Make the Peanut Sauce:

    • Heat a small amount of oil in a pan over medium heat. Add the garlic, shallots, and red chilies. Fry until fragrant and golden brown. Remove from heat and drain.
    • In a blender, combine the fried garlic, shallots, chilies, and roasted peanuts. Add hot water gradually until the mixture reaches a smooth, paste-like consistency. Blend until finely ground.
    • Transfer the blended mixture back to the pan. Add a little hot water at a time, stirring constantly, until the sauce reaches your desired thickness. Season with salt, and adjust sweetness with additional sugar if needed. Simmer for a few minutes until the flavors meld together. Set aside.
  3. Prepare the Marinade:

    • In a bowl, mix the sesame oil, soy sauce, sweet soy sauce, margarine, and peanut sauce. Stir well to combine.
  4. Marinate the Chicken:

    • Brush the chicken skewers with the marinade and let them sit for at least 30 minutes to absorb the flavors.
  5. Grill the Satay:

    • Preheat your grill or grill pan over medium-high heat. Cook the chicken skewers, turning occasionally, until they are nicely charred and cooked through (about 5-7 minutes per side).
  6. Serve:

    • Serve the grilled chicken satay hot with the peanut sauce on the side. Enjoy this delicious Indonesian classic with steamed rice or a side salad.

Tips:

  • For extra flavor, you can add a pinch of ground coriander or cumin to the marinade.
