Soto Ayam (Indonesian Chicken Soup)

Ingredients

  • 1/2 kg chicken
  • 2 1/2 liters water
  • 3 cloves garlic
  • 8 cloves shallots
  • 1 stalk lemongrass
  • 5 kaffir lime leaves
  • 7 stalks celery
  • 2 stalks green onions
  • 2 sachets of ready-made soto seasoning
  • 2 teaspoons seasoning powder
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Prepare the Ingredients:

    • Finely chop the garlic, shallots, and lemongrass.
    • Slice the green onions and celery, keeping them separate.
  2. Blend the Spices:

    • Using a mortar and pestle or a blender, grind the garlic, shallots, and lemongrass into a fine paste.
    • Mix in the ready-made soto seasoning sachets until well combined.
  3. Cooking the Base:

    • In a large pot, heat a small amount of oil over medium heat.
    • Add the spice paste and sauté until fragrant.
    • Toss in the green onions and lemongrass stalk, continuing to sauté until aromatic.
  4. Cooking the Chicken:

    • Add the chicken pieces to the pot, stirring well to coat them in the spice mixture.
    • Cook the chicken thoroughly, ensuring it is well coated with the spices.
  5. Adding the Broth:

    • Once the chicken is cooked through, pour in the water.
    • Add the sugar, salt, and seasoning powder.
    • Stir well to combine, then cover the pot and bring it to a boil.
  6. Final Touches:

    • After the broth reaches a boil, reduce the heat and simmer for about 5 minutes.
    • Add the kaffir lime leaves and celery stalks.
    • Cover the pot again and let it simmer for an additional 5 minutes.
  7. Serving:

    • Remove the pot from heat.
    • Serve the Soto Ayam hot, garnished with fried shallots if desired.
