Ingredients
- 1/2 kg chicken
- 2 1/2 liters water
- 3 cloves garlic
- 8 cloves shallots
- 1 stalk lemongrass
- 5 kaffir lime leaves

- 2 teaspoons seasoning powder
- 1 teaspoon salt
- 1 teaspoon sugar

- Slice the green onions and celery, keeping them separate.

- Using a mortar and pestle or a blender, grind the garlic, shallots, and lemongrass into a fine paste.
- Mix in the ready-made soto seasoning sachets until well combined.

- In a large pot, heat a small amount of oil over medium heat.
- Add the spice paste and sauté until fragrant.
- Toss in the green onions and lemongrass stalk, continuing to sauté until aromatic.

- Add the chicken pieces to the pot, stirring well to coat them in the spice mixture.
- Cook the chicken thoroughly, ensuring it is well coated with the spices.

- Once the chicken is cooked through, pour in the water.
- Add the sugar, salt, and seasoning powder.
- Stir well to combine, then cover the pot and bring it to a boil.

- Add the kaffir lime leaves and celery stalks.
