Soto Daging Sapi: Indonesian Beef Soup Recipe

Soto Daging Sapi, a traditional Indonesian beef soup, is a culinary delight that combines tender beef with aromatic herbs and spices, creating a rich, flavorful broth. This dish is perfect for any occasion, from family dinners to special celebrations. Here’s how to make this delicious soup from scratch.

Ingredients:

  • For the Soup:

    • 1/2 kg beef, cut into bite-sized cubes
    • 1500 ml water (for boiling)
    • 1 stalk lemongrass, smashed
    • 5 kaffir lime leaves
    • 4 bay leaves
    • 1 sachet beef-flavored seasoning (such as Royco)
    • 1 tablespoon granulated sugar
    • 1 teaspoon salt
  • For the Spice Paste:

    • 6 shallots
    • 4 cloves garlic
    • 1 thumb-sized piece of turmeric
    • 2 candlenuts
    • 1 cm ginger
    • 1 cm galangal
    • 1 teaspoon ground black pepper
  • For Garnishing and Serving:

    • 1 bunch scallions, sliced (about 1 cm pieces)
    • Fresh cilantro (optional)
    • Fried shallots
    • 1/3 cabbage, sliced thinly
    • 1/4 cup rice vermicelli (corn vermicelli can be used as an alternative)
    • Tomatoes, sliced (to taste)
    • Sweet soy sauce
    • Lime wedges
    • Chili paste or sambal (to taste)

Instructions:

  1. Prepare the Beef:

    • Rinse the beef thoroughly and cut it into small cubes according to your preference.
    • In a large pot, bring 1500 ml of water to a boil and add the beef. Let it simmer for about 30 minutes or until the beef is tender.
  2. Prepare the Spice Paste:

    • While the beef is cooking, grind the shallots, garlic, turmeric, candlenuts, ginger, and galangal into a fine paste. You can use a mortar and pestle or a food processor for this task.
  3. Cook the Spice Paste:

    • In a separate pan, heat a little oil over medium heat. Add the ground spice paste to the pan and sauté until fragrant.
    • Add the kaffir lime leaves, bay leaves, and smashed lemongrass to the pan. Continue to cook for a few minutes, allowing the spices to release their flavors. Pour in a small amount of the beef broth (from the boiling beef) to deglaze the pan.
  4. Combine and Season:

    • Transfer the sautéed spice paste mixture into the pot with the beef. Stir well to combine.
    • Season the soup with salt, beef-flavored seasoning (such as Royco), and granulated sugar. Taste the soup and adjust the seasoning as needed.
  5. Finish and Serve:

    • Once the soup is cooked and flavorful, turn off the heat. Stir in the sliced scallions and, if using, fresh cilantro and sliced tomatoes.
    • To serve, place a portion of rice vermicelli and thinly sliced cabbage into each bowl. Ladle the hot soup over the top.
    • Garnish with fried shallots, a drizzle of sweet soy sauce, a squeeze of lime, and a dollop of sambal or chili paste, if desired.
