Soto Seger Daging Sapi: A Refreshing Indonesian Beef Soup

Soto Seger Daging Sapi, a quintessential Indonesian beef soup, is celebrated for its fragrant, flavorful broth and tender meat. Ingredients

  • 400 grams beef (daging sapi)
  • 2 liters water
  • 2 bay leaves (daun salam)
  • 4 kaffir lime leaves (daun jeruk)
  • 1 stalk lemongrass (serai), bruised
  • 1 thumb-sized piece of galangal (lengkuas), bruised
  • 1 tablespoon granulated sugar
  • 1 stalk green onion (daun bawang)
  • 1 ½ tablespoons salt
  • 1 tablespoon beef or mushroom bouillon powder
  • ½ tomato, chopped
  • 1 tablespoon cooking oil

For the Spice Paste (Bumbu Halus):

  • 5 shallots (bawang merah)
  • 3 garlic cloves (bawang putih)
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground coriander (ketumbar bubuk)
  • 1 centimeter piece of ginger (jahe)
  • 3 candlenuts (kemiri), toasted

Garnishes:

  • 2 tablespoons chopped fresh coriander leaves (daun seledri)
  • 1 lime (jeruk nipis)
  • Fried shallots (bawang goreng) for topping

Instructions

  1. Prepare the Beef and Broth:

    • In a large pot, bring 2 liters of water to a boil. Add the beef and cook until tender. For quicker results, you can use a pressure cooker. Once the beef is tender, remove it from the pot and cut into bite-sized pieces. Set aside.
    • Strain the broth to remove impurities and keep approximately 1500 ml of the broth. Set this aside in a separate pot.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, black pepper, coriander, ginger, and toasted candlenuts into a smooth paste. You can use a food processor or mortar and pestle.
  3. Sauté the Spice Paste:

    • Heat the cooking oil in a pan over medium heat. Add the spice paste along with the bay leaves, kaffir lime leaves, bruised lemongrass, and galangal. Sauté until the paste becomes fragrant and slightly dry.
  4. Combine Ingredients:

    • Transfer the sautéed spice paste into the pot of reserved beef broth. Bring the mixture to a boil. Add the granulated sugar, salt, bouillon powder, chopped tomato, and sliced green onion. Stir well and simmer until the flavors meld together.
  5. Strain the Soup:

    • Before serving, strain the soup to remove any coarse bits of spice and herbs. This ensures a smooth and enjoyable texture, free from any unwanted remnants of galangal, lemongrass, and leaves.
  6. Serving:

    • In individual bowls, place a portion of cooked rice. Top with slices of beef and bean sprouts. Ladle the hot soup over the top. Garnish with chopped fresh coriander leaves and a sprinkling of fried shallots. Serve with lime wedges on the side.
