Semur Telur Ayam: A Delightful Indonesian Braised Egg Dish

Semur Telur Ayam is a classic Indonesian dish that combines hard-boiled eggs with a rich and aromatic spiced sauce. This dish is deeply flavorful, thanks to a blend of aromatic spices and sweet soy sauce, making it a perfect addition to any meal. Below, you will find a detailed recipe to recreate this traditional Indonesian favorite.

Ingredients:

  • Eggs: 500 grams (about 8-10 large eggs), hard-boiled and peeled
  • Bay Leaves: 3 leaves
  • Lemongrass: 2 stalks, bruised
  • Cardamom Pods: 2 pieces
  • Star Anise: 2 pieces
  • Cloves: 2 pieces
  • Cinnamon Stick: 3 cm
  • Nutmeg: 1/4 piece, grated
  • Ginger: 3 cm, crushed
  • Galangal: 3 cm, crushed
  • Granulated Sugar: 1 teaspoon
  • Salt: 1 1/2 teaspoons
  • Sweet Soy Sauce (Kecap Manis Bango): 8-10 tablespoons, or to taste
  • Ground Spices:
    • Shallots: 8 pieces, sliced and lightly fried
    • Garlic: 4 cloves
    • Whole Peppercorns: 1/2 teaspoon
    • Candlenuts: 5 pieces, toasted
  • Tomato: 1 medium, blended or pureed

Instructions:

  1. Prepare the Spice Mixture:

    • Begin by heating 3 tablespoons of cooking oil in a pan over medium heat. Add the ground spices and sauté until fragrant.
    • Incorporate the blended tomato into the pan and cook until the mixture is well-combined and aromatic.
  2. Add Aromatic Ingredients:

    • To the pan, add bay leaves, nutmeg, galangal, ginger, cinnamon stick, star anise, cloves, and bruised lemongrass. Stir and cook until the spices release their fragrance.
  3. Simmer the Dish:

    • Pour in 2-3 cups of water and bring to a boil. Once boiling, add the hard-boiled eggs, salt, sugar, sweet soy sauce, and seasoning (optional: beef-flavored seasoning, such as Masako).
    • Reduce the heat and let it simmer, stirring occasionally. Cook until the sauce reduces and thickens to your liking. For a more substantial sauce, adjust the water according to your preference and taste, then season accordingly.
  4. Final Touches:

    • Once the sauce has reached the desired consistency, remove from heat. Garnish with fried shallots before serving.
  5. Serving:

    • Serve the Semur Telur Ayam warm with steamed rice or your preferred side dishes. The rich, savory sauce combined with the tender eggs makes for a comforting and flavorful meal.

Enjoy this traditional Indonesian dish that’s perfect for family dinners and special occasions. The blend of spices and sweet soy sauce provides a unique and delicious taste that will surely delight your taste buds!
