- 2 cardamom pods
- 4 cloves
- 1 stalk lemongrass, bruised
- 1 galangal, bruised

- 2 kaffir lime leaves, torn
- 2 cloves garlic
- 4 shallots
- 4 candlenuts
- 1 teaspoon coriander
- 2-3 bird’s eye chilies (adjust according to desired spiciness)
- 2 red curly chilies (optional, can be skipped)
- Turmeric (to taste)
- Pepper (to taste)

- 1 cup cabbage, cut into thick slices
- 2 green tomatoes, sliced
- 1/2 red tomato, sliced
- 2 spring onions, chopped

- Sweet soy sauce (kecap manis)
- Salt
- Pepper
- Sugar (to taste)
- Seasoning powder (optional, such as Magic seasoning)

Cooking Oil:
- 1 teaspoon cooking oil (for sautéing)

Prepare the Beef:
- Clean and cut the beef into bite-sized pieces.
- In a large pot, boil the beef in water for 1 hour until tender.
- Once tender, add nutmeg to the pot and continue simmering until the beef is fully cooked and flavorful. Remove the beef and set aside.

Prepare the Spice Paste:
- Using a mortar and pestle or food processor, grind the shallots, garlic, candlenuts, coriander, bird’s eye chilies, and red curly chilies into a smooth paste.
- Bruise the lemongrass, galangal, and ginger, and tear the kaffir lime leaves into pieces.

- Heat the cooking oil in a pan over medium heat. Sauté the spice paste along with the bruised lemongrass, galangal, ginger, and kaffir lime leaves until fragrant.
- Add 1 cup of water and bring to a boil.
