Ingredients

  • Beef:

    • 250 grams (1/4 kg) beef, cut into bite-sized pieces
    • 1/4 teaspoon nutmeg (for simmering the beef)
  • For the Broth:

    • 70 ml packaged coconut milk (or coconut cream)
    • 1 cup water
  • Aromatics and Spices:

    • 2 cardamom pods
    • 4 cloves
    • 1 stalk lemongrass, bruised
    • 1 galangal, bruised
    • 1/2 piece ginger, bruised
    • 2 kaffir lime leaves, torn
    • 2 cloves garlic
    • 4 shallots
    • 4 candlenuts
    • 1 teaspoon coriander
    • 2-3 bird’s eye chilies (adjust according to desired spiciness)
    • 2 red curly chilies (optional, can be skipped)
    • Turmeric (to taste)
    • Pepper (to taste)
  • Vegetables:

    • 1 cup cabbage, cut into thick slices
    • 2 green tomatoes, sliced
    • 1/2 red tomato, sliced
    • 2 spring onions, chopped
  • Seasoning:

    • Sweet soy sauce (kecap manis)
    • Salt
    • Pepper
    • Sugar (to taste)
    • Seasoning powder (optional, such as Magic seasoning)
  • Cooking Oil:

    • 1 teaspoon cooking oil (for sautéing)

Instructions

  1. Prepare the Beef:

    • Clean and cut the beef into bite-sized pieces.
    • In a large pot, boil the beef in water for 1 hour until tender.
    • Once tender, add nutmeg to the pot and continue simmering until the beef is fully cooked and flavorful. Remove the beef and set aside.
  2. Prepare the Spice Paste:

    • Using a mortar and pestle or food processor, grind the shallots, garlic, candlenuts, coriander, bird’s eye chilies, and red curly chilies into a smooth paste.
    • Bruise the lemongrass, galangal, and ginger, and tear the kaffir lime leaves into pieces.
  3. Cook the Broth:

    • Heat the cooking oil in a pan over medium heat. Sauté the spice paste along with the bruised lemongrass, galangal, ginger, and kaffir lime leaves until fragrant.
    • Add 1 cup of water and bring to a boil.
    • Add the pre-cooked beef to the pan along with cloves and cook until the mixture is boiling.
  4. Add Coconut Milk and Seasonings:

    • Pour in the coconut milk and stir to combine.
    • Season with salt, pepper, sugar, and seasoning powder to taste.
    • Add sweet soy sauce according to your preference. Stir until well combined and adjust seasoning as needed.
  5. Add Vegetables:

    • Add the cabbage, green tomatoes, red tomato, and chopped spring onions.
    • Stir and cook until the vegetables are tender and the broth thickens to your liking.
  6. Final Touches:

    • Taste the broth and adjust the seasoning if needed. Let the stew simmer until the flavors meld and the broth thickens.
  7. Serve:

    • Remove from heat and serve the Tongseng Daging Sapi hot with steamed rice.
    • Optionally, you can add a squeeze of lime juice and some sambal for an extra kick.
