Instructions for Preparing Panforte

Step 1: Prepare the Sweet Base

Start by placing sugar and honey in a small saucepan over medium heat. Stir occasionally, allowing the sugar to dissolve completely. Once the mixture is smooth and the sugar has melted, remove it from the heat and set it aside to cool slightly.

Step 2: Mix the Dry Ingredients

In a large Pyrex bowl or mixing bowl, combine the candied citron, candied orange, and almonds. Stir the ingredients well to distribute the fruits and nuts evenly. Then, add the all-purpose flour to the mixture and continue stirring with a spoon until fully incorporated. The mixture may seem a bit dense and tough, but don’t worry – this is perfectly normal for the texture of Panforte.

Step 3: Add the Spices

Now it’s time to add the aromatic spices! Sprinkle in the cinnamon, ground cloves, coriander, and freshly grated nutmeg. Mix all these spices into the dough, making sure they are evenly spread throughout. If you find it easier, you can use your hands to knead the ingredients together to make sure everything is fully integrated.

Step 4: Line the Pan with Wafer Paper

Before you transfer your mixture to the baking pan, prepare it by lining the bottom with wafer paper. If you don’t have wafer paper, you can substitute with parchment paper, but the wafer paper adds authenticity and makes the Panforte easier to remove once baked.

Step 5: Prepare the Pan and Fill with Mixture

Now, take a strip of parchment paper that matches the dimensions of your baking pan (roughly 17-18 cm in circumference). Line the sides of the pan with the parchment paper, ensuring it covers the full interior. Next, transfer your sticky dough mixture into the prepared pan. Use a spoon that’s been dipped in water to help press the mixture evenly into the pan. Keep wetting the spoon to avoid sticking, allowing you to smooth the dough into a uniform layer.

Step 6: Dust with Powdered Sugar

Once the mixture is pressed into the pan, take about 10g of powdered sugar and sprinkle it generously over the surface of the Panforte. This will give it a lovely finishing touch, as well as an additional layer of sweetness.

Step 7: Bake the Panforte

Place the Panforte in a preheated static oven at 220°C (428°F) and bake it for approximately 10 minutes. The surface should begin to harden, and the sweet aroma will fill the air, signaling it’s time to remove the Panforte from the oven.

Step 8: Let it Cool and Finish

Once you’ve removed the Panforte from the oven, allow it to cool slightly in the pan. Carefully remove it from the pan and peel off the parchment paper. Dust it once more with powdered sugar for a smooth, elegant finish. Let the Panforte cool completely on a wire rack before slicing.

Serving Your Panforte

Panforte can be served in small slices, as it is dense and rich. This Italian delight is perfect for sharing during festive seasons, family gatherings, or as a gift to friends. It pairs beautifully with a warm cup of espresso or a glass of dessert wine.

Tips for the Perfect Panforte

  1. Storage: Panforte keeps well for several weeks when stored in an airtight container. The flavors continue to develop, making it even more delicious as it sits.
  2. Flavor Variations: Feel free to experiment with different candied fruits, such as figs or apricots, or even add a handful of dark chocolate pieces for a decadent twist.
  3. Spices: Adjust the spice amounts to suit your taste. If you prefer a spicier Panforte, increase the cinnamon or cloves. You can also add a dash of black pepper for an added zing.

Enjoy the rich, flavorful tradition of Panforte, a timeless Italian treat that will delight your taste buds and transport you straight to Tuscany with every bite.
