Instructions

  1. Prepare the Rabbit: Begin by blanching the rabbit pieces in plenty of boiling water for 10 minutes. After the time has passed, drain the rabbit and set it aside to cool.

  2. Prepare Vegetables: While the rabbit cools down, clean and slice the celery and carrots into bite-sized pieces.

  3. Sear the Rabbit: Heat a generous amount of olive oil in a large skillet over medium-high heat. In the meantime, lightly flour the rabbit pieces, shaking off any excess flour. Once the oil is hot, carefully add the rabbit pieces to the pan, browning them on all sides for a few minutes. Remove the rabbit from the skillet and set it aside.

  4. Cook the Vegetables: In the same skillet, add the celery, carrots, garlic cloves, capers, and green olives that have been slightly crushed by hand. Stir the mixture for a few minutes until the vegetables soften.

  5. Combine Rabbit and Vegetables: Once the vegetables have softened, return the rabbit to the pan. Add a small amount of warm water to the pan, just enough to cover the rabbit. Season with salt and stir everything together.

  6. Simmer the Dish: Cover the pan and let the rabbit cook for about 30 minutes. After this time, remove the lid and add sugar and white wine vinegar. Stir everything together to combine, allowing the vinegar and sugar to dissolve and the flavors to meld.

  7. Final Touches: Let the dish simmer for another 10 minutes, allowing the sauce to thicken slightly and the flavors to fully incorporate.
