Instructions

  1. Prepare the Dough:
    In the bowl of a stand mixer fitted with a hook attachment, or in a large bowl if you’re mixing by hand, combine the Manitoba flour, sugar, and powdered milk. Mix well.

  2. Activate the Yeast:
    Dissolve the fresh yeast in a small amount of lukewarm water. Once dissolved, add it to the dry ingredients in the bowl.

  3. Incorporate the Liquids:
    Dissolve the salt in the remaining water and gradually pour it into the flour mixture while kneading. Continue kneading until a dough begins to form. Add the olive oil and keep kneading until the dough is smooth and elastic.

  4. First Rising:
    Transfer the dough to a lightly floured work surface. Shape it into a ball and place it in a bowl. Cover the bowl with plastic wrap and leave the dough to rise in a warm spot (such as an oven with the light on) for about 2 hours, or until it has doubled in size.

  5. Shape the Bagels:
    Once the dough has risen, turn it out onto a lightly floured surface. Divide it into 5 equal pieces. Roll each piece into a ball, then create a hole in the center of each ball with your fingers to form the bagel shape. Stretch the hole slightly to ensure it doesn’t close during baking.

  6. Second Rising:
    Place the formed bagels on a baking tray lined with parchment paper. If you have Za’tar (a Middle Eastern spice mix), you can sprinkle some over the surface of each bagel for added flavor. Let the bagels rest and rise for about 1 hour.
