Ingredients:
For the Fish Marinade:
- 1-inch ginger, finely chopped
- 4 garlic cloves, finely chopped
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 cup coconut milk
- 1/4 cup tamarind water
- 1 sprig curry leaves
- 1 teaspoon mustard seeds
- Salt, to taste
- 2 Kingfish fillets, cut into pieces
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon lemon juice
For the Malvani Masala:
- 1 teaspoon coriander seeds
- 1/2 teaspoon cumin
- 1 teaspoon fennel seeds
- 1-inch cinnamon stick
- 2 cloves
- 1 bay leaf
- 1/2 teaspoon whole black pepper
- A pinch of nutmeg powder
- 4 dried red chilies
- 1 star anise

Instructions:

Marinate the Fish:
Wash the fish thoroughly and drain the water completely.
In a bowl, mix the fish with red chili powder, turmeric powder, cumin powder, coriander powder, salt, and lemon juice. Let it marinate for 30 minutes. -
Prepare the Malvani Masala:
In a pan, dry roast the coriander seeds, cumin, fennel seeds, cinnamon, cloves, bay leaf, star anise, and black pepper for 5 minutes.
Transfer the roasted spices to a grinder and add the dried red chilies and nutmeg. Grind them into a fine powder. -
Make the Fish Curry:
Heat mustard oil in a pan. Add the mustard seeds and let them splutter.
Add curry leaves and sauté for 10 seconds.
Add ginger, garlic, and onion, and cook until the onions turn brown.
Add the tomatoes, salt, and turmeric powder, and cook until the tomatoes soften.
Once the tomatoes are cooked, add the Malvani masala and cook for 1 minute.
Add tamarind water and cook for 2-3 minutes.
Reduce the heat and add coconut milk. Bring to a boil.
Add the marinated fish and the remaining masala, mix well.
Add some water, and adjust the salt as needed. Stir and cover the pan. Let it simmer for 10 minutes.
Turn off the heat. -
Serving:
Serve the Malvani Fish Curry with steamed rice and a side of cucumber salad.
