Malvani Masala Powder Recipe

Malvani Masala is a traditional spice mix from the Malvan region of Maharashtra, known for its rich and aromatic flavors. Ingredients:

  • Dry Red Chillies – 6
  • Coriander (Dhania) Seeds – 2 tablespoons
  • Whole Black Peppercorns – 1 tablespoon
  • Fennel Seeds (Saunf) – 1 tablespoon
  • Cumin Seeds (Jeera) – 1 tablespoon
  • Poppy Seeds – 2 tablespoons
  • Mace (Javitri) – 5 pieces
  • Cloves (Laung) – 5
  • Cinnamon Stick (Dalchini) – 3 inches
  • Star Anise – 2
  • Stone Flower (Dagad Phool) – 3 pieces (optional)
  • Nutmeg Powder – 1 tablespoon
  • Turmeric Powder (Haldi) – 2 teaspoons
  • Asafoetida (Hing) – 1 teaspoon

Instructions:

  1. Heat a pan on medium heat. Add coriander seeds, cumin seeds, fennel seeds, black peppercorns, and poppy seeds. Dry roast them for about 2 minutes until aromatic.
  2. Add the dry red chilies, star anise, mace, cloves, stone flower (if using), nutmeg powder, turmeric powder, and asafoetida. Roast for another 3 minutes, stirring continuously to prevent burning.
  3. Remove the roasted spices from the pan and allow them to cool completely.
  4. Once cooled, grind the spices into a coarse powder using a spice grinder or mortar and pestle.
  5. Transfer the Malvani Masala to an airtight container or mason jar. Store in a cool, dry place to retain freshness and aroma.
