Malvani Mutton Curry

Ingredients:
- 300 grams Mutton (on the bone), washed and cleaned
- Salt, to taste
- 1/2 teaspoon Turmeric powder (Haldi)
- 1/3 cup Water
- 4 tablespoons Malvani masala (store-bought or homemade)
- 2 tablespoons Oil
- 2 Onions, finely chopped
- 1 tablespoon Ginger, finely chopped
- 1 tablespoon Garlic, finely chopped
- 1 Tomato, finely chopped

Prepare the Mutton: In a pressure cooker, add the cleaned mutton, water, salt, and turmeric powder. Pressure cook for 2 whistles. Once done, turn off the flame and let the pressure release naturally.

Cook the Aromatics: Heat oil in a kadai (pan) on medium flame. Add ginger and garlic, sautΓ©ing for about a minute until fragrant. Then add the chopped onions and cook them until they turn a deep brown color.

Add Malvani Masala: Stir in the Malvani masala and chopped tomatoes. Cook until the tomatoes soften and turn mushy, releasing their juices. Turn off the heat and let the mixture cool.

Grind the Base: Once cooled, transfer the onion-tomato mixture into a blender and grind into a coarse paste, adding a small amount of water if necessary.

Combine and Cook Again: Transfer the coarsely ground paste into the pressure cooker with the pre-cooked mutton. Mix everything well and cook for an additional 2 whistles in the pressure cooker. Allow the pressure to release naturally once again.
