Ingredients:

Instructions:

  1. Sift the Flours:
    Begin by sifting the wheat flour and besan separately to ensure they are free of lumps and aerated. This step helps in achieving a smooth and consistent dough.

  2. Mix Ingredients:
    Create a well in the center of the sifted flours. Add the finely chopped methi leaves, chili powder, yogurt, and salt into this well. Mix all the ingredients together until well combined.

  3. Form the Dough:
    Gradually incorporate the flour from the edges of the well into the mixture. If needed, add a little water, a tablespoon at a time, to make a stiff dough. The dough should be pliable but firm.

  4. Knead the Dough:
    Knead the dough for a few minutes until smooth and elastic. Cover it with a damp cloth and let it rest for 15 minutes. This resting period allows the dough to become more manageable.

  5. Prepare the Portions:
    After the resting period, knead the dough again for a minute or two. Divide the dough into walnut-sized portions. Roll each portion into a smooth ball.

  6. Roll Out the Theplas:
    Lightly flour your rolling surface and rolling pin. Take one dough ball, flatten it slightly, and roll it out into a thin circle, similar in thickness to a chapati. Repeat with the remaining dough balls.

  7. Cook the Theplas:
    Heat a griddle or tawa over high heat. Once hot, lower the flame to the lowest setting. Place a rolled-out thepla on the griddle. Cook until you see small bubbles forming on the surface.

  8. Flip and Cook:
    Flip the thepla over. Increase the flame to medium and cook until the thepla puffs up and develops golden brown spots. Smear a little oil on the upper surface, then flip the thepla once more. Apply oil to this side as well.

  9. Final Cooking:
    Flip the thepla over one more time and cook until both sides are golden brown and crisp. Repeat this process for all the theplas.

  10. Serve Hot:
    Serve the hot methi theplas with your favorite chutney, pickle, or yogurt for a delightful meal.
