Instructions

Step 1: Prepare the Arbi

Start by thoroughly washing the arbi (taro root) to remove any dirt. Once washed, peel the skin off and cut the arbi into thin, long slices. Make sure the pieces are of uniform size for even cooking.

Step 2: Cook the Spices

Heat 2 teaspoons of ghee in a heavy-bottomed pan or kadhai. Add the cumin seeds to the hot ghee and let them sizzle for about 15 seconds. Then, add the slit green chilies and sauté for another minute, allowing their flavors to infuse the oil.

Step 3: Add Onion

Now, add the finely chopped onions to the pan. Cook the onions on medium heat until they become soft and translucent, which should take around 4-5 minutes.

Step 4: Cook the Arbi

Once the onions are softened, add the sliced arbi pieces into the pan. Stir well to coat the arbi with the ghee and spices. Let it cook for 4 minutes, stirring occasionally.

Step 5: Add Spices

After the arbi has cooked for 4 minutes, it’s time to add the dry spices. Add red chili powder, turmeric powder, and salt to taste. Mix well, ensuring the spices are evenly coated on the arbi pieces. At this stage, do not add the amchur and garam masala powders yet.

Step 6: Simmer the Dish

Lower the heat and cover the pan. Let the arbi cook for another 15-20 minutes, stirring occasionally. You may need to sprinkle a little water to prevent the dish from burning, as arbi tends to cook slowly and can stick to the pan. Keep stirring gently to ensure even cooking.

Step 7: Add Amchur and Garam Masala

Once the arbi is tender and fully cooked, add the amchur (dry mango powder) and garam masala powder to the pan. Stir well to mix the spices and let it cook for an additional 1 minute.

Step 8: Garnish and Serve

Turn off the gas and garnish with freshly chopped coriander leaves. Serve the Punjabi Style Arbi Sabzi hot with your choice of phulka (Indian flatbread), paratha, or steamed rice. For an added touch, you can serve it alongside panchmel dal and spinach raita for a complete and satisfying meal.
