Cinnamon stick (Dalchini) 1 inch
Salt To taste
Coriander leaves (chopped) 4 sprigs

For the Tadka (Tempering)

Instructions

Step 1: Prepare the Gatte

  1. Mix Ingredients for Gatte Dough:
    In a large mixing bowl, combine gram flour, ajwain, red chili powder, curd, oil, and salt. Gradually add small amounts of water and knead the mixture into a firm dough. Knead for 5-7 minutes to ensure the dough becomes soft and pliable.

  2. Shape the Gatte:
    Divide the dough into equal portions. Roll each portion into long cylindrical shapes about Β½ inch thick. Cut these rolls into 1-inch discs to form the gatte pieces.

  3. Cook the Gatte:
    Boil water in a large saucepan. Once the water reaches a rolling boil, add the prepared gatte discs. Cook until they float to the top, then allow them to boil for an additional 3-4 minutes. Remove from the water, drain, and set aside.

    In a large saucepan, whisk together yogurt and gram flour until smooth and lump-free. Add 2Β½ cups of water, asafoetida, turmeric powder, red chili powder, and salt. Mix thoroughly.
