Tengkleng Ayam Khas Solo: Traditional Solo Chicken Bone Stew

Ingredients:

  • 1 kg chicken bones with some meat and 5 chicken wings
  • 5 bird’s eye chilies (adjust to taste)
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 3 cm ginger, smashed
  • 2 stalks lemongrass, smashed
  • 1.5 liters water
  • 2 tablespoons brown sugar (can be substituted with kecap manis or sweet soy sauce)
  • Salt and chicken bouillon powder to taste

For the Spice Paste:

  • 8 shallots
  • 6 garlic cloves
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon cumin seeds
  • 1 piece turmeric (about 5 cm), peeled
  • 4 candlenuts
  • 5 red chilies (adjust to taste; use bird’s eye chilies for more heat)
  • Cooking oil for sautéing

Instructions:

  1. Prepare the Spice Paste:

    • In a food processor or mortar and pestle, blend the shallots, garlic, coriander seeds, cumin seeds, turmeric, candlenuts, and red chilies into a smooth paste.
  2. Cook the Spice Paste:

    • Heat a generous amount of cooking oil in a large pot over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
  3. Add Aromatics:

    • Add the bay leaves, kaffir lime leaves, ginger, and lemongrass to the pot. Continue to sauté for a few minutes to release their aromas.
  4. Simmer the Stew:

    • Pour in the water and bring the mixture to a boil. Add the chicken bones and wings, ensuring they are well covered by the liquid. Stir in the brown sugar (or kecap manis), salt, and chicken bouillon powder.
  5. Cook Until Flavorful:

    • Once boiling, reduce the heat to low and let the stew simmer gently. Cook uncovered for about 1 to 1.5 hours, or until the oil begins to float to the surface and the meat is tender.
  6. Adjust Seasoning:

    • Taste the stew and adjust the seasoning with additional salt or sugar if needed.
  7. Serve:

    • Turn off the heat and let the stew sit for a few minutes before serving. Enjoy your Tengkleng Ayam Khas Solo hot, either as a main dish or with steamed rice.
