  • Kaffir Lime Leaves: 2 leaves
  • Nutmeg, Cinnamon, and Cumin Powder: A pinch of each
  • Galangal: 1-inch piece, smashed

For the Spice Paste:

  • Shallots: 3 cloves
  • Garlic: 2 cloves
  • Candlenuts: 2
  • Coriander Seeds: 1 teaspoon
  • Red Chilies: 3
  • Ginger: 1-inch piece

For Garnishing:

  • Emping Crackers
  • Chopped Green Onions
  • Sambal Godog (Indonesian Chili Sauce)
  • Tomato Slices

Instructions

  1. Prepare the Broth: Start by boiling the chicken bones in a pot of boiling water for 1-2 minutes. Discard the water to remove impurities. Refill the pot with fresh water and bring it back to a boil.

  2. Sauté the Spices: In a pan, heat some oil and sauté the spice paste ingredients (shallots, garlic, candlenuts, coriander seeds, red chilies, and ginger) until fragrant and golden brown.

  3. Combine Ingredients: Add the sautéed spices to the boiling chicken broth. Add kaffir lime leaves, smashed galangal, nutmeg, cinnamon, and cumin powder. Season with salt, pepper, and sugar to taste.

  4. Add Vegetables and Chicken: Stir in the instant coconut milk and sliced carrots. Cook until the carrots are tender. Add the fried potatoes and shredded fried chicken to the pot. Let the soup simmer until all ingredients are well combined and heated through.

  5. Serve: Arrange the shredded chicken and fried potatoes in serving bowls. Ladle the hot soup over the top, making sure each bowl gets a generous amount of broth. Garnish with emping crackers, chopped green onions, sambal godog, and tomato slices.

  6. Enjoy: Serve the Soto Betawi Ayam warm, and enjoy the rich, aromatic flavors of this traditional Indonesian dish.

This Soto Betawi Ayam recipe brings the essence of Indonesian cuisine to your table with its vibrant flavors and comforting texture. Perfect for a family meal or a special gathering, this dish is sure to impress and satisfy.
