Soto Medan Asli (Beef Soup)

Ingredients:

  • 250 grams beef (cut into 100-gram pieces for broth, with the remaining pieces for frying)
  • 250 grams beef lungs (cut into pieces and fried)
  • 500 ml thick coconut milk
  • 1,000 ml thin coconut milk
  • Salt and sugar to taste
  • 2 bay leaves
  • 2 stalks lemongrass, bruised
  • 1 thumb-sized piece of galangal, bruised
  • A handful of kaffir lime leaves
  • Oil for sautéing

Ground Spice Mix:

  • 50 grams coriander seeds, toasted
  • 10 shallots
  • 5 garlic cloves
  • A thumb-sized piece of turmeric
  • 1 candlenut
  • 2 cm ginger

For Garnishing:

  • Fried shallots
  • Potato fritters (perkedel kentang)
  • Cooked bean sprouts
  • 2 limes, sliced
  • Chili sauce (sambal cabe rawit)

Instructions:

  1. Prepare the Broth:

    • Heat oil in a large pot over medium heat. Sauté the ground spice mix until fragrant.
    • Add the bay leaves, kaffir lime leaves, bruised lemongrass, and bruised galangal. Continue to sauté until the spices are aromatic.
  2. Cook the Beef:

    • Add the 100 grams of beef pieces to the pot. Sauté briefly to combine the flavors.
  3. Add Coconut Milk:

    • Pour in the thin coconut milk, stirring to combine. Bring the mixture to a gentle simmer, ensuring the coconut milk does not curdle. Keep the heat low.
  4. Simmer and Add Thick Coconut Milk:

    • Once the broth has come to a boil, gradually add the thick coconut milk while stirring. Continue to simmer until the broth is well combined and heated through.
  5. Season and Garnish:

    • Season with salt and sugar to taste. Add sliced green onions and celery leaves, then turn off the heat.
  6. Serve:

    • Ladle the soto into bowls, topping each with pieces of fried beef or beef lungs. Garnish with fried shallots, potato fritters, cooked bean sprouts, and lime slices.
  7. Prepare the Chili Sauce:

    • For the sambal cabe rawit, boil the chilies until soft, then grind them briefly to create a spicy sauce.
  8. Enjoy:

    • Serve the Soto Medan with steamed rice and enjoy the rich, aromatic flavors of this authentic Indonesian beef soup.
