Whole Wheat Flour 1-1/2 cups
Turmeric Powder (Haldi) 1/4 teaspoon
Oil 1 tablespoon

Arhar Dal (Split Toor Dal) 1 cup
Jaggery 1-1/2 cups
Fresh Coconut (optional) 1/2 cup
Cardamom Powder (Elaichi) 1 teaspoon

Instructions:

Step 1: Prepare the Dough for the Poli

  1. Start by adding the Whole Wheat Flour and Turmeric Powder (Haldi) into a large mixing bowl.
  2. Gradually add water in small amounts and knead the mixture until it forms a firm dough.
  3. Once the dough comes together, add the Oil and knead it for a few more minutes until the dough becomes smooth and firm.
  4. Cover the dough with a damp cloth and let it rest for about 30 minutes in a cool place while we prepare the filling.

Step 2: Make the Puran (Lentil Filling)

  1. Rinse the Arhar Dal (Split Toor Dal) and cook it in a saucepan with 1 to 1-1/4 cups of water. Cook until the dal becomes soft and tender.
  2. Drain any excess water from the cooked dal and set it aside to cool.
  3. In a separate pan, heat Ghee over medium heat. Add the Jaggery and stir it until it dissolves completely.
  4. Add the cooked dal, Fresh Coconut (if using), and Cardamom Powder into the pan with jaggery. Mix everything well.
  5. Continue cooking the mixture while stirring, allowing the filling to thicken. Keep stirring until it starts to leave the sides of the pan.
  6. Once the mixture has thickened, remove it from the heat and set it aside to cool completely. This is your Puran Filling.

Step 3: Assemble the Poli

  1. Once the dough has rested, divide it into 12 equal portions.
  2. Divide the cooled Puran Filling into 12 portions as well.
  3. Dust a clean surface with a little flour and roll each portion of dough into a small ball. Roll out each ball into a 3-inch diameter circle using a rolling pin.
  4. Place one portion of the Puran Filling in the center of the dough circle.
  5. Gently fold the edges of the dough towards the center to cover the filling. Pinch the edges together to seal the filling inside the dough.
  6. Carefully flatten the stuffed dough ball and dust it with a little flour. Roll it out gently into a 6- to 8-inch diameter circle, ensuring not to press too hard to avoid spilling the filling.

Step 4: Cook the Poli

  1. Preheat an iron skillet or griddle over medium-high heat.
  2. Place the rolled Poli onto the hot skillet and cook it until both sides turn golden brown, about 2-3 minutes per side.
  3. To enhance the flavor, you can brush the cooked Poli with Ghee while it’s still hot.
  4. Repeat the process with the remaining dough and filling portions.

Step 5: Serve and Enjoy

  1. Serve the South Indian Poli (Boli/Obbattu/Holige) hot, smeared with a little Ghee on top.
  2. This sweet treat is perfect for festive occasions, religious ceremonies, and family gatherings. Enjoy it with loved ones and savor the traditional flavors of South India!
