Spicy Ayam Rica Rica Recipe

Ingredients:

  • 5 pieces of chicken (including neck)
  • 5 shallots
  • 2 cloves of garlic
  • Chilies (to taste)
  • 1 candle nut
  • 1 tamarind ball
  • Coriander seeds
  • Lemongrass stalk
  • Bay leaves

Instructions:

  1. Begin by boiling the chicken pieces with a few of the aromatics, including garlic and coriander seeds, to infuse the meat with flavor. Add enough water to cover the chicken and cook until tender. Remove the chicken from the pot and set aside.

  2. While the chicken is boiling, prepare the chilies. Blanch them briefly in hot water to soften, which will make them easier to blend later.

  3. Next, blend together the shallots, garlic, blanched chilies, candle nut, coriander seeds, and tamarind. Use a food processor or mortar and pestle to create a smooth paste.

  4. Heat some oil in a pan over medium heat and add the blended paste. Sauté the paste until it becomes fragrant and the oil begins to separate from the mixture.

  5. Add the bay leaves and lemongrass stalk to the pan, stirring them into the paste.

  6. Pour in enough water to create a sauce, adjusting the amount according to your preference for consistency. Bring the mixture to a boil.

  7. Once the sauce is bubbling, add the previously boiled chicken pieces back into the pan. Stir to coat the chicken evenly with the sauce.

  8. Allow the chicken to simmer in the sauce until fully cooked and the sauce has reduced to your desired thickness. The dish is ready when the chicken is tender and the sauce is rich and flavorful.

  9. Serve the spicy Ayam Rica Rica hot with steamed rice or your favorite side dishes.
