Authentic Spicy Beef Curry with Coconut Milk

Beef Curry Recipe

Ingredients:

  • 1 kg beef short ribs
  • 1 thumb-sized piece of turmeric
  • 3 large red chilies
  • 5 shallots
  • 2 cloves garlic
  • 1 packet instant coconut milk
  • Bay leaves
  • Lemongrass
  • Salt, palm sugar, and seasoning to taste

Instructions:

  1. Begin by boiling the beef short ribs until they are slightly tender. Once cooked, cut the beef into bite-sized pieces and discard the cooking water.

  2. In a fresh pot of water, add the chopped beef pieces and bring it to a boil.

  3. While the beef is cooking, prepare the spice paste. Blend together the turmeric, red chilies, shallots, and garlic until smooth.

  4. Heat some oil in a pan and sauté the spice paste until fragrant. Then, add this paste to the beef broth.

  5. Season with salt, palm sugar, and other seasonings to taste. Adjust the flavors as needed.

  6. Pour in the instant coconut milk and reduce the heat to low. Simmer gently to prevent the coconut milk from curdling.

  7. Once the curry has reached a boiling point, remove from heat.

  8. Serve the beef curry hot and enjoy your meal!
