Instructions

  1. Prepare the Yellow Curry Paste:
    Start by preparing the Thai yellow curry paste. To do this, place the finely chopped ginger, diced yellow bell pepper, chopped garlic, dry red chilies, lemongrass, and coriander leaves in a blender or food processor. Add the ground coriander seeds, black pepper powder, kaffir lime leaves (or lemon zest), turmeric powder, and salt to the mix. Blend all the ingredients into a smooth paste, adding a small amount of water if necessary to help blend the paste. Set the curry paste aside.

  2. Cook the Curry:
    Heat the oil in a large pot or deep skillet over medium heat. Once the oil is hot, add the chopped onion, ginger, and garlic. Sauté for 2–3 minutes, until the onion becomes translucent and the mixture is aromatic.

  3. Add the Chicken:
    Add the chicken thighs to the pot and cook for about 5–7 minutes until they are browned on all sides.

  4. Incorporate the Curry Paste:
    Add the freshly prepared Thai yellow curry paste to the pot, stirring well to coat the chicken evenly. Let the paste cook with the chicken for about 2–3 minutes, allowing the spices to infuse the chicken.

  5. Add the Potato and Coconut Milk:
    Now, add the diced potato to the pot along with the coconut milk. Stir everything together, ensuring that the chicken and potatoes are well mixed with the curry paste and coconut milk.

  6. Simmer the Curry:
    Bring the curry to a gentle boil, then reduce the heat to low. Cover the pot and let the curry simmer for 15–20 minutes, or until the potatoes are tender and the chicken is fully cooked.
