Instructions for Avarakkai Poricha Kootu

  1. Cook the Moong Dal:
    Start by cooking the yellow moong dal in a pressure cooker. Add the dal along with about 1 cup of water, 1/4 teaspoon of turmeric powder, and salt to taste. Pressure cook for 4 whistles. Once done, allow the pressure to release naturally. Set the cooked dal aside.

  2. Cook the Avarakkai:
    In the same pressure cooker, place the chopped Avarakkai (broad beans). Add a pinch of salt and about 2 tablespoons of water. Pressure cook for just 1 whistle. Once the pressure cooker cools down, release the pressure immediately to retain the vibrant green color of the broad beans.

  3. Combine Avarakkai and Dal:
    Add the cooked Avarakkai to the cooked moong dal. Stir well to combine.

  4. Make the Kootu Masala:
    For the Kootu masala, grind together the grated coconut, dry red chillies, cumin seeds, and curry leaves into a smooth paste. Add a couple of tablespoons of water to help with grinding and achieve a fine consistency.

  5. Mix the Masala:
    Add the prepared Kootu masala to the mixture of Avarakkai and dal. Stir well to combine. Taste and adjust the salt as needed.

  6. Prepare the Seasoning (Tadka):
    In a small pan, heat coconut oil over medium heat. Add the mustard seeds and allow them to crackle. Then, add the white urad dal and roast until it becomes lightly browned and crisp. Stir in the curry leaves and turn off the heat.

  7. Combine the Tadka with Kootu:
    Add the prepared seasoning (tadka) to the Avarakkai Kootu and stir to mix thoroughly.

  8. Final Boil:
    Before serving, bring the dish to a brisk boil to ensure all flavors are well-combined. You can adjust the consistency by adding a little water. Keep in mind that Kootu is typically thicker in texture, but you can make it to your desired consistency.

  9. Serve:
    Transfer the Avarakkai Poricha Kootu to a serving bowl and serve hot. This dish pairs wonderfully with Thakkali Rasam, Keerai Masiyal, steamed rice, and crispy papad for a wholesome, balanced meal.
