Prepare the Avocado:
Begin by squeezing the juice of half a lemon into a bowl. Cut the avocados in half, removing the pit. Use a spoon to scoop the flesh into the bowl. Add the lemon juice, a drizzle of extra virgin olive oil, salt, and black pepper to taste. Mash the avocado with a fork until it reaches a creamy consistency. Make the Cheese Mixture:
