Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Servings: 6 pancakes
Calories: 484.3 per serving

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/3 teaspoon salt
  • 1/3 cup butter, melted
  • 1 cup buttermilk
  • 2/3 cup milk
  • 2 eggs
  • 1 1/2 cups Granny Smith apples, peeled and diced
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese

Instructions:

  1. Prepare the Pancake Batter:
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

  2. Mix Wet Ingredients:
In a separate bowl, whisk together the melted butter, buttermilk, milk, and eggs until well combined.

  3. Combine Wet and Dry Ingredients:
Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a wooden spoon or spatula until just combined. The batter should be slightly lumpy; do not overmix.

  4. Add Apples, Bacon, and Cheese:
Gently fold in the diced Granny Smith apples, crumbled bacon, and shredded cheddar cheese into the pancake batter.

  5. Cook the Pancakes:
Heat a large nonstick skillet or griddle over medium-high heat and lightly grease with oil or butter.

  6. Cooking the Pancakes:
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 3-4 minutes.

  7. Flip and Finish Cooking:
Carefully flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.

  8. Keep Warm:
Transfer the cooked pancakes to a plate and cover loosely with foil to keep warm while cooking the remaining pancakes.

  9. Serve:
Serve the Apple, Bacon, and Cheddar Pancakes warm, topped with maple syrup or your favorite pancake toppings.

These Apple, Bacon, and Cheddar Pancakes are a delightful twist on traditional pancakes, combining savory bacon, sharp cheddar cheese, and sweet Granny Smith apples for a perfect balance of flavors. They’re ideal for a hearty breakfast or brunch option that the whole family will love!
