Ingredients:
- 2 onions, chopped
- 1/2 lb bacon, cut into 1/2 inch wide pieces
- 2 lbs ground beef
- 2 lbs lean ground beef
- 2 cans (15 oz each) red kidney beans, drained and rinsed
- 2 tbsp chili powder (adjust to taste)
Instructions:
-
Prepare Ingredients:
Using kitchen scissors, snip the bacon into 1/2 inch wide pieces directly into a large pot or Dutch oven placed on the stove. -
Cook Bacon:
Fry the bacon over medium heat until it starts to brown, stirring occasionally to ensure even cooking. -
Add Onions:
Add the chopped onions to the pot with the bacon. Continue cooking and stirring until the onions are translucent and cooked through, about 5-8 minutes. -
Brown Ground Beef:
Add both types of ground beef to the pot. Cook, stirring occasionally, until the beef is browned and mixed well with the bacon and onions. -
Combine Ingredients:
Stir in the drained and rinsed red kidney beans and chili powder. Mix everything thoroughly to combine flavors. -
Simmer:
Reduce the heat to low and let the chili simmer on the stove for about 2 hours, stirring occasionally to prevent sticking and to blend the flavors together. -
Serve:
Once the chili has simmered to your desired consistency and flavors have melded, it’s ready to serve. Enjoy hot with your favorite side dishes like dinner rolls or garlic bread.
