Ingredients:

  • 3 slices of bacon
  • 1/4 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3/4 cup carrot, chopped
  • 1 clove garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken broth
  • 1 can (15 ounces) great northern beans, drained and rinsed
  • 3/4 cup small shell pasta

Instructions:

Step Description
1 Cook bacon in a large saucepan over medium heat until almost done, approximately 5-6 minutes, ensuring not to brown it too much.
2 Stir in chopped onion, celery, carrot, and minced garlic, cooking until they become almost tender, around 4-5 minutes, allowing the vegetables to absorb the flavors of the bacon.
3 Add diced tomatoes to the saucepan, stirring well to incorporate, and continue cooking for about 10 minutes, allowing the flavors to meld and the tomatoes to break down slightly.
4 Pour in chicken broth and add the drained and rinsed great northern beans, stirring to combine. Bring the mixture to a boil over medium-high heat.
5 Once boiling, add the small shell pasta to the soup and cook for approximately 8 to 10 minutes, or until the pasta is tender but still slightly firm to the bite, stirring occasionally to prevent sticking.
6 If the soup becomes too thick during cooking, you can add a little water to reach your desired consistency.
7 Serve hot, garnished with a sprinkle of freshly grated Parmesan cheese or chopped parsley, if desired. Enjoy the warmth and flavor of this quick and easy pasta and bean soup!

Notes:

  • For added flavor, consider using homemade chicken broth or low-sodium broth to control the salt content of the soup.
  • Feel free to customize this soup with your favorite vegetables or beans for a variation that suits your taste preferences.
  • This soup can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer-term storage. Reheat gently on the stovetop or in the microwave until heated through.
  • Pair this soup with a crusty loaf of bread or a side salad for a complete and satisfying meal.
