Mini Quiches with Bacon, Leeks, and Asparagus

Ingredients:

Grana Padano DOP cheese (grated) 100g

Instructions:

  1. Prepare the Asparagus:

    • Start by cleaning and cooking the asparagus. Rinse them thoroughly and dry them with a kitchen towel or paper towels. Trim off the tough, woody ends and cut them to a uniform length for even cooking.
    • Using a vegetable peeler or a small knife, peel the outer skin of the asparagus stalks, removing the fibrous green layer. Continue until the stalk is entirely white.
    • Tie the asparagus together with kitchen twine, then cook them for 8–10 minutes. If you don’t have an asparagus steamer, you can simply cook the asparagus horizontally in a wide pot with a few inches of boiling water. Once done, drain and gently pat dry with a towel.
    • Cut the asparagus into small rounds, keeping the tips for garnish. Set aside.
  2. Prepare the Leeks:

    • Clean the leek by removing the outer leaves. Slice it thinly into rounds.
    • In a non-stick pan, heat the extra virgin olive oil over low heat. Add the leeks and cook for 4–5 minutes, until they become soft and translucent. Remove from heat and set aside.
  3. Cook the Bacon:

    • Slice the smoked bacon into strips. Cook it in a skillet over medium heat until it becomes crispy, then remove it from the pan. Be sure to discard any excess fat.
  4. Make the Egg Mixture:

    • In a mixing bowl, crack the eggs and beat them with a whisk. Season with salt and black pepper to taste. Reserve a few asparagus tips for topping.
    • Stir in the grated Grana Padano cheese until well combined.
  5. Assemble the Quiches:

    • Preheat your oven to 200°C (390°F) for conventional baking or 180°C (350°F) for a fan-assisted oven.
    • Unwrap the shortcrust pastry discs and place them into 8cm mini tart pans, lined with parchment paper.
    • Fill each pastry case with a generous amount of the asparagus and leek mixture.
    • Add a few strips of crispy bacon on top of the filling, followed by the reserved asparagus tips for garnish.
  6. Bake:

    • Place the filled mini quiche pans on a baking tray and bake in the preheated oven for 10 minutes (for conventional oven) or 5 minutes (for fan-assisted oven). The quiches should be golden brown and cooked through.
  7. Serve:

    • Once done, carefully remove the quiches from the pans and transfer them to a serving plate. Serve warm or at room temperature.
