Ingredients:

  • 5 slices of bacon
  • 1 large onion
  • 2 cloves of garlic
  • 1 tablespoon chopped parsley
  • 8 cups chicken stock or broth
  • 2 cups water
  • 2 cups chopped cabbage
  • 1 large carrot
  • 1/4 cup grated parmesan cheese

Instructions:

Step Description
1 Prepare Ingredients: Begin by cutting the bacon into 1/2-inch pieces. In a 5-6 quart pan, cook the bacon over medium heat until it’s soft and translucent. Spoon off and discard all but 2 tablespoons of the drippings. Add the chopped onion, minced garlic, and chopped parsley to the pan with the bacon. Cook, stirring occasionally, until the onion and bacon are lightly browned.
2 Simmer Soup: Pour in the chicken stock or broth and water, then add the chopped cabbage and carrot to the pot. Bring the mixture to a boil over high heat. If the ravioli are stuck together, separate them and add them to the pot. Reduce the heat to medium and let the soup gently boil, uncovered, stirring occasionally, until the ravioli are just tender. This usually takes about 10 minutes for fresh ravioli or 12 minutes for frozen.
