Bacon-Wrapped Veal Rolls with Grilled Peppers and Edamer Cheese

Ingredients:

Veal (Scottona) 8 slices
Red Bell Pepper 1
Bacon (Cured) 8 slices
Edamer Cheese 8 slices
Fresh Thyme 2 sprigs
Extra Virgin Olive Oil To taste
Salt To taste
Black Pepper To taste
White Wine 20g
Water 70g

Instructions:

  1. Prepare the Peppers:
    Begin by washing the red bell pepper thoroughly. Slice it in half, removing the stem and seeds. Cut the pepper into 8 even strips, each about 3 cm wide.
  2. Grill the Peppers:
    Heat a grill pan or outdoor grill over high heat. Once the grill is very hot, place the pepper strips on it. Grill for approximately 10 minutes until the peppers are nicely charred on the outside but still tender. Once grilled, transfer the peppers to a baking dish and cover them with plastic wrap to keep them warm and soft.
  3. Assemble the Rolls:
    Take a slice of veal and place it flat on a cutting board. In the center of each slice, lay half of a slice of Edamer cheese. On top of the cheese, add one slice of the grilled pepper. Sprinkle a few fresh thyme leaves over the pepper and season with salt and pepper. Carefully roll the veal slice around the filling, making sure it’s tightly secured.
  4. Wrap with Bacon:
    Wrap a slice of cured bacon around each veal roll to secure it. Repeat this process until all the rolls are prepared.
  5. Cook the Rolls:
    Heat a little olive oil in a large skillet over medium heat. Add two sprigs of fresh thyme to the pan. Once the oil is hot, carefully place the veal and bacon rolls in the skillet. Sear the rolls for about 5 minutes, turning them occasionally so they brown evenly on all sides.
  6. Deglaze the Pan:
    Pour the white wine into the skillet to deglaze the pan, stirring to lift any flavorful bits stuck to the bottom. Cover the pan with a lid and let the rolls cook for another 5 minutes.
  7. Finish and Serve:
    After 5 minutes, remove the lid, increase the heat slightly, and let the remaining liquid reduce until it thickens. The rolls should be golden and tender. Turn off the heat and serve immediately while they are still hot and delicious.
