Instructions

  1. Prepare the Mascarpone Cream:

    • Start by making the mascarpone cream. In a saucepan, combine the sugar and water. Stir gently, then place the pan over medium heat.
    • Heat the sugar and water mixture until it reaches a temperature of 121°C (use a kitchen thermometer to monitor the temperature closely).
    • Once the syrup reaches 121°C, slowly pour it into the egg yolks while whisking constantly. Continue to whisk until the mixture has cooled completely, creating a smooth, thick texture known as pâte à bombe.
  2. Mix Mascarpone:

    • In a separate bowl, gently soften the mascarpone with a spatula to make it easier to blend.
    • Add the mascarpone into the cooled egg yolk mixture gradually, mixing with an electric mixer on low speed until fully incorporated.
  3. Add Baileys:

    • Pour in half of the Baileys (60g) and gently mix it into the mascarpone mixture. Add the remaining Baileys (70g) and continue to mix until smooth and fully combined.
    • Cover the bowl with plastic wrap and refrigerate the cream for at least 30 minutes to let the flavors meld.
  4. Prepare the Coffee Mixture:

    • Brew a strong espresso coffee using a moka pot or espresso machine. Pour the coffee into a bowl, then add 60g of Baileys to the hot coffee. Stir well to combine and allow it to cool to room temperature.
  5. Prepare the Pandoro:

    • Slice the Pandoro into 1 cm thick slices. Then cut each slice into three long strips. You’ll need enough strips to line your serving dish.
  6. Assemble the Tiramisu:

    • Take a rectangular baking dish (28×22 cm) and spread a thin layer of the mascarpone cream at the bottom.
    • Arrange a layer of Pandoro slices on top, ensuring the dish is filled completely. You can trim and place small pieces to fill any gaps.
    • Using a pastry brush, lightly soak the Pandoro with the Baileys-coffee mixture, ensuring each piece is evenly moistened but not soggy.
  7. Layering the Cream:

    • Add a thicker layer of the mascarpone cream over the soaked Pandoro.
    • Repeat the process: soak more slices of Pandoro, add another layer of cream, and finish with a final layer of Pandoro slices.
  8. Final Touch:

    • Spread the remaining mascarpone cream over the top layer of Pandoro, smoothing it out to cover evenly.
    • Lightly dust the top with unsweetened cocoa powder, using a fine sieve for a delicate finish.
  9. Chill and Serve:

    • Refrigerate the tiramisu for at least 4 hours to allow the flavors to set and the dessert to firm up.
    • Once chilled, slice and serve this creamy, decadent tiramisu with Baileys and Pandoro. It’s perfect for any celebration!
