Tamarind 20 grams, soaked in water

Step 1: Prepare Tamarind Extract
To begin with, soak a lemon-sized piece of tamarind in 1/4 cup of hot water. Let it soak for 15-20 minutes to soften. After soaking, squeeze the pulp to extract the juice into a separate bowl. If needed, add a little extra water to the tamarind pulp to extract more of the juice. Set the tamarind extract aside.

Step 2: Make the Ground Paste
In a mixer grinder, combine the onion, ginger, garlic, green chillies (if using), and coriander leaves. Grind these ingredients into a smooth paste without adding any water. Set this ground paste aside for later use.

Step 3: Cook the Base
Heat sunflower oil in a heavy-bottomed pan over medium heat. Add the prepared paste to the pan and sauté for 2-3 minutes, stirring occasionally. The paste should turn fragrant and slightly darker.

Step 4: Add Spices
Once the paste has sautéed well, add the turmeric powder, red chilli powder, and sambar powder. Mix well and cook for about a minute. This step helps to cook the raw smell of the spices and blend the flavors together.

Step 5: Cook Brinjal
Next, add the cubed brinjal (baingan) along with a pinch of salt. Stir everything well to coat the brinjal in the spices. Cover the pan and cook the brinjal on low heat until it softens and is well roasted. Stir occasionally to ensure the brinjal doesn’t burn.

Step 6: Add Prawns and Other Ingredients
Once the brinjal is cooked, add the prawns, tomato puree, tamarind extract, and salt to taste. Mix everything well, ensuring the prawns and brinjal are evenly coated with the curry base. Cover the pan with a lid and cook for another 3-4 minutes, as prawns cook quickly.

Step 7: Final Adjustments
After the prawns are cooked, check the seasoning and adjust the salt and spices according to your taste. If necessary, add a little more tamarind extract for extra tanginess or spice for a more intense flavor.

Step 8: Serve and Enjoy
Once the curry is ready, remove the pan from the heat. Transfer the Brinjal Prawns Masala Curry to a serving bowl and garnish with fresh coriander leaves.
